They woke up before sunrise, mixed water with refined flour, using their hands to knead it, laid it down, covered it with a wet cloth, made Lebanese coffee and sat down together to socialize while waiting for the dough to rise. When the dough came calling, they shaped it into balls, lit their wooden ovens, started flattening their dough balls, mixed their zaatar, opened their shops and the sun came out to greet their first guest with 'sabah el kheir', the morning of goodness. I would smell the amazing flavors on our way to school and always ask my dad and my mom to get me mana'eesh.
Teta is what we call our grandmothers and mine was the best. My grandmother was a loving soul, a teenager at heart until the last day of her life, her soul lives through me, her children, her grandchildren, her great-grandchildren and through her recipes, that I use till this day just the way she used to cook them for us.
